How did Brush Creek Ranch come about?

Brush Creek Ranch was first acquired in 2008 by Bruce White, Chairman and CEO of White Lodging, one of the most respected names in the hotel industry and operator of award winning premium hotel brands across the country.

The Lodge & Spa at Brush Creek Ranch is the culmination of the White family’s extensive hospitality experience, continuous dedication to philanthropy and unabashed passion for the sustainability of authentic Western heritage.

Our vision unfolds as a refined 30,000-acre getaway that strikes a perfect balance between active outdoor recreation, shared experiences, economic sustainability and preservation of the Western way of life. A spirit of hard work, recreation, adventure and good times shared together are prevalent in the archives of days past at Brush Creek Ranch, from famous barn and campfire cookouts to fishing on the renowned Brush Creek.

This heritage is still apparent in the current incarnation of Brush Creek as a luxury guest ranch, and visitors will find that despite the plethora of modern amenities, Brush Creek is still a working Wyoming ranch at heart - albeit one that has been named a Travel + Leisure and Conde Nast Traveler #1 resort.

What is Brush Creek Ranch’s mission?

Mission | Make Every Guest a Lifetime Guest.

Motto | To create and deliver indelible memories as vast as the western skies.

Do you have a famous menu item we can share with our clients?

Our guests love our steak sauce recipe served with our American Wagyu. Brush Creek's American Wagyu is known for its intense marbling and high percentage of unsaturated fat, which gives this delicacy a melt-in-your mouth buttery texture, subtle sweetness and lasting finish.

The Farm at Brush Creek Steak Sauce

To Start:

  • 2 pounds beef trim (1 inch-by-1 inch), preferably dry-aged

  • 2 cups yellow onion, peeled and cut into 1-inch pieces

  • 1 cup shallots, sliced

  • 10 garlic cloves

  • 10 thyme sprigs

  • 20 black peppercorns

  • 1 cup dark raisins

  • ½ cup capers

  • ¼ cup Worcestershire sauce

  • ¼ cup malt vinegar

  • 2 kilos (or 70 ounces) beef stock

To Finish:

  • 1 kilo finished dry aged beef jus base (from above recipe)

  • 4 tablespoons butter

  • 3 teaspoons anchovy essence

  • 6 teaspoons walnut oil

  • 4 teaspoons Worcestershire sauce

  • 3 teaspoons rendered beef fat

In an 8-quart rondeau (or large heavy-bottom pot) caramelize the beef fat. Add onion, shallot, and caramelize. Add garlic, thyme, and black peppercorns and sweat for 20 minutes. Add the rest of ingredients including the 2 liters of beef stock. Simmer lightly for 20 minutes.

Strain through a colander and reduce slowly while constantly skimming. Reduce to a slightly loose 1 kilo (or 35 ounces) and strain into a 2-liter pot. Whisk in all finishing ingredients and adjust seasoning with black pepper and malt vinegar. Strain through chinois cloth and reserve.

Serve over your favorite cut of beef.

Charity of Brush Creek Ranch’s choice to support?

Since 2011, the Big Shoulders Fund, a Chicago based charity that supports inner-city schools through scholarships and enrichment programs, has partnered with Brush Creek Ranch to provide their students with once-in-a-lifetime opportunities that explore new adventures, discover the great outdoors, and push them to do more than they ever thought they could. Nearly 300 students travel to Wyoming each summer to participate in one of three core programs: Staddle Camp, Junior Counselors, and Outdoors Bound.

Staddle Camp - Staddle Camp offers select Chicago area middle-schoolers a six-day trip to Brush Creek Ranch to learn about nature and experience life in the West. Every week during the summer a new group of students and teacher chaperones travel to Wyoming to engage in educational and fun activities as a reward for participating in science and history enrichment sessions throughout the school year. Campers are encouraged to learn by doing, explore and appreciate nature, and try new things! You can learn more and donate HERE.
